Garden Tomato Juice
When all those tomatoes start to look like too much zucchini try making tomato juice! This recipe has no exact ingredients or portions except that you will want more tomatoes than the other ingredients. Start with a large cooking pot. Add to the pot the following ingredients:
Celery plus tops
Sugar – at least 2 teaspoons or a little more
Dash of Worcestershire Sauce
Kosher salt and freshly ground pepper
Roughly chop the vegetables. Place in the pot. Let them come to a soft boil and reduce the heat and simmer for at least an hour or until thoroughly cooked. Here’s the part that makes the tomato juice: a food mill. A food mill is a food preparation utensil for mashing and sieving soft foods. A good gadget to have on hand. Place the food mill over a large bowl. Carefully remove the vegetables from the pot, (a cup or more at a time) emptying them into the food mill and grind thru the sieve until most of the vegetables become liquid in the bowl. Repeat until all the vegetables have been mashed.
Pour into quart-size jars and store in the refrigerator.
