Portuguese Grilled Chicken

Recipe for September 4, 2011

 

This chicken will be a fitting way to entertain your Labor Day guests.  Couple the chicken with a selection of the great foods that are available at the market:  sliced heirloom tomatoes, corn on the cob, melons, cheeses, peaches, breads, cupcakes and cookies.  Now you have a meal.  Enjoy the markets gelato ice cream cone on your way home!

For the rub:

2 large garlic cloves*, peeled and sliced

1 large bay leaf, crumbled fine

2 teaspoons Hungarian sweet paprika

1 tablespoon Kosher salt

1/4 teaspoon crushed dried, red chili peppers

1/4 teaspoon ground pepper

2 tablespoons olive oil

2 chickens*, halved

 

Mash the garlic, bay leaf, paprika, salt, chili peppers, pepper, and olive oil to a paste.  Rub mixture  well on both sides of the chicken. Cover and refrigerate for several hours.  Let stand at room temperature before grilling.  Grill for 15 minutes on one side and 15 minutes on the other.  Test for doneness.
