Farmers' market fresh green beans are incomparable for their texture, flavor, and freshness. I think that's why a simple dish is a great, easy way of highlighting them. This recipe from start to finish can take less than 20 minutes and can be adapted with a variety of spices or additions like toasted almonds, red pepper flakes, or crumbles of bacon.
1 lb fresh green beans, ends trimmed
1 Tbls olive oil
1 Tbls butter
1 large garlic clove, minced
salt and pepper to taste
small lemon slice (optional)
Blanch the green beans for 2 minutes by adding them to a boiling stock pot of well-salted water. They will turn a bright green and still be tender crisp. Remove from heat, drain, and shock in a bowl of ice water to stop cooking.
Heat a skillet over medium heat, add the oil and butter. Add the garlic and saute for about 30 seconds. Add the beans and continue to saute until coated in the butter and heated through, about 5 minutes. Season with salt and pepper. Squeeze lemon juice on top of beans and serve.
